Made from Gamay grown organically on granite soils. Fermented semi-carbonic in concrete tanks, fiberglass, and stainless steel tanks. The wine is made from 40 year old vines, and has a lovely balance of structure and youthful fruit. Pair it with soy braised pork shoulder, served with coconut lime rice and bok choy.
