This wine is made of 100% Chenin Blanc. One sip of this wine and you can almost taste the quartz and schist in the vineyards that this cuvée was made from. Complex on the nose showing honey, mushroom, saffron and hay, with flavors of sweet mandarin orange, quince, and honey. We would pair this with mussels, clams and shrimp in a spicy broth or some hearty gumbo. During this vintage the Mosse vineyards suffered significant damage from hail, so this cuvée is a blend of grapes picked from three of their best vineyards – Les Bonnes Blanches, Marie Besnard et Le Rouchefer which is where the three parts of the name come from.
