Fattoria Selvapiana 'Villa Petrognano' Pomino Rosso DOC, 2021
This wine is a field blend of 50% Sangiovese and 50% Cabernet Sauvignon and Merlot. We would pair it with rigatoni alla Bolognese. Pomino is a rare and tiny appellation within the Chianti Rufina subzone, and is almost exclusively farmed by Marchesi di Frescobaldi. This wine is the result of a great opportunity for Selvapiana, due to the friendship of the owner of Petrognano, Cecilia Galeotti Ottieri and Francesco Giuntini. Selvapiana rents six hectares of vines. In 1716. Pomino was declared to be one of the four major areas in Tuscany to produce quality wines, by the Grand Duke of Tuscany Cosimo de'Medici. The hills of Rufina and Pomino are high enough to allow the grapes to develop juicy acidity from warm days and cool nights, in a phenomenon called diurnal shift. In addition to being refreshingly acidic, the wines have silky tannins and a pleasantly long finish.
